Shrimp and Orzo Pasta

This Shrimp Orzo Pasta with Tomatoes and Cheese is one of my favorite recipes for the summer. Will and I were both wanting seafood a few nights ago so I fixed it for dinner. It was originally featured in Cooking Light in 2005. It is super yummy and healthy too!

You will need:
1 cup uncooked orzo
2 tablespoons olive oil, divided
3/4 teaspoon salt, divided
1/4 teaspoon black pepper, divided
1 pound medium shrimp, peeled and deveined
1 cup chopped Vidalia onion
1 tablespoon minced garlic
2 cups cherry tomatoes, halved
1/3 cup grated fresh pecorino ramano cheese
1/3 cup chopped fresh basil

Cook the pasta according to the package directions, omitting salt. While the pasta cooks, heat 1 tablespoon oil in a large skillet over medium-high heat. Sprinkle 1/2 teaspoon of salt and 1/8 teaspoon of black pepper evenly over shrimp. Add shrimp to pan; cook 1 1/2 minutes on each side or until done. Remove from pan.


Add remaining 1 tablespoon olive oil to the pan. Add onion, garlic (and 1/4 teaspoon crushed red pepper, if desired); cook 2 minutes, stirring frequently. Add tomatoes, and cook 3 minutes or until tomatoes begin to soften, stirring occasionally.

Stir in the pasta and shrimp; cook 1 minute or until thoroughly heated. Remove from heat, and stir in 1/4 teaspoon salt, 1/8 teaspoon black pepper, cheese and basil.

Bob and the ladies

We headed to Atlanta last Friday to visit with the Young's. This was Bob's first time there and he was able to meet sweet Caroline (and James and Sally too - but they were napping during our photo shoot!). We tried to get a cute picture of both of them together. Never an easy task...

Then once we were back in town we had a cook out with the Crull's where Bob was able to meet precious Mary Alice!

and I couldn't leave you without some cute pics of Anne. I was taking lots of pictures of Bob when she walked up and exclaimed "Mommy, take Annie's picture too"!

Then she took my iPhone and pretended to take pictures of me.

Palm Sunday Hunt

Our church has an Easter Egg Hunt on Palm Sunday every year in the park across the street and then a picnic lunch afterwards. This year it was a beautiful day. We put Bob in the nursery and had a great time with Annie. She loved hunting eggs, but really liked the candy inside them. She only collected a few eggs before stopping to enjoy her treats! The local ice cream truck was tipped off about the picnic, so we were able to enjoy a tasty treat after lunch. Perfect on the warm, sunny day!

Easter 2012

I accidentally uploaded all the pictures on the right side of the page which is why this post looks different...






We headed to Montgomery last Saturday for the Inscoe's annual Easter Egg Hunt. It was a beautiful day! Anne had a blast running around Huntington. It was great to catch up with family and friends. I forgot my camera's memory card so I do not have many pictures. Thank goodness for the iphone!




Our attempt at a family picture after church on Sunday was not successful. Also notice Anne's play jewelry. The Easter bunny made a rookie mistake and brought it in her Easter basket. She insisted on wearing it with her "pretty dress". I did manage to slip off the clip on earrings and disney flip flops on our way to church!

We also celebrated my brother's 40th birthday/Easter Sunday evening with my Dad's family. It was a great time and I can't believe I forgot to take pictures. Oh well!

Rolling Over

Bob can officially roll over now! I put him down for "tummy time" the other day and he rolled over to his back. I flipped him back to his stomach and he immediately did it again. I guess I need to stop calling him my newborn! Here he is in action...

Birthday fun

My birthday fell the week of Spring Break so we celebrated while in Point Clear. On the big day Bradford and I spent a wonderful afternoon at The Grand's Spa. SO relaxing. Then we got sitters and went to dinner at Camellia Cafe which was delicious. It was a fun way to celebrate! The next night Will surprised me with a cake from the hotel so we could celebrate with the kids.

Anne was so sweet singing "Happy Birthday to Mommy". I must thank her teachers at the day school for teaching it to her! It melted my heart every time. And she sang it to me for about a week following my big day :-)

Spring Break

Anne's Mother's Day Out program was out for spring break a couple of week's ago so we decided to pack up and head down to Point Clear. This was Bob's first trip down there. Anne had already been there several times at that age! Packing up and heading out of town is not as simple as it used to be :-) We invited the Bankhead's to join us. Lulah and Anne are big buddies and I'm sure Hollis and Bob will be too!
